Just as I was settling in to my fall groove, enjoying the crisp fall air (forget the the day it snowed and the 70 degree days) & bright colored leaves scattered across the sidewalks, and chowing down on all things pumpkin, squash and spice, I strolled into Macy's last week to the sound of Christmas music. Christmas music!!! It's not even Thanksgiving, it's just the middle of November and Christmas music is playing already. I was partially annoyed, partially excited, and before I knew what I was doing I was humming along. I willed myself to wait until Thanksgiving to fall into the holiday spirit, but the lights and music and decorations were all too much. And if that didn't do it, seeing those red Starbucks holiday cups certainly would have done me in.
But, before I get started on a holiday baking marathon, there are still plenty of fall goodies not to be missed.....like these awesome salty and spicy Toasted Pepitas.
Spicy Toasted Pepitas
1 cup pepitas
1 teaspoon canola oil
1 tablespoon garlic powder
1 teaspoon paprika
1/4 teaspoon cayenne pepper
2 tablespoons sea salt
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
In a small bowl, combine garlic powder, paprika, cayenne & salt and mix together.
In a medium bowl, toss pumpkin seeds with oil to fully coat. Add spice mixture and mix to coat pepitas.
Spread pepitas in a single layer, on a parchment lined baking sheet. Bake for 5-8 minutes, stirring seeds occasionally.
