Carbo-Loading Time

We are quickly approaching one of my most favorite weekends of the entire year.....NYC Marathon weekend!  Even if you're not a runner, coming out & watching the marathon is so uplifting and inspiring and motivating, and the cheering is utterly contagious.  It is such a FUN day!
For years I swore I'd never run a marathon, I had no interest.  But then Marathon Sunday would roll around, and I could feel myself living vicariously through the thousands of runners out there that day.  It made me wonder if maybe I actually did want to run a marathon.  Then, some time would pass, and I'd go back to declaring my lack of interest.  In the back of my mind I think I knew I'd eventually give in.  In 2009, I decided to try my chances and entered the lottery for the NYC Marathon, but it was not meant to be that year and my name didn't get selected.  I entered the lottery again last year, much to my dismay got in and ran my first marathon.  It was a long and somewhat painful day, and a day that I still remember so, so vividly, and all the highs and lows of the day still feel palpable. 

This year work and culinary school have kept me pretty busy, leaving little time for anything other than casual running.  But, the trade off has been worth it, and I think my body has been enjoying the break.  While I'm not running the marathon this year, I'm just as excited to be joining my running club at mile 19 for a day of cheering and noise-making. 

And, it wouldn't be marathon weekend without carbo-loading!  Here are some of my absolute favorite pasta dishes to get you fueled up:
