Apple-Ricotta Pita Bites


Aaand, I'm back!  It's been a while.  I know.  I'm sorry.  The past month has been busy, busy, busy.  I've been hard at work at school, figuring my plans post-culinary school and trying to fit in some fun stuff in my free time.  I'll spare you a long stories and give you an update with photos, instead.....that's more fun anyway.

A few days after my last post I joined 7 of my running buddies for the Ocean to Sound Relay in Long Island.  We ran in costume as Tetris pieces...complete with theme music.  We were robbed of the best costume award.  Probably not so surprising, but it was a whole lot less comfortable running in a box than I anticipated.

I ran as a "z" piece.


I joined one of my culinary school friends for a tasty lunch at Chelsea Market and a taping of the Martha Stewart Show.  The show's set was unreal, and the kitchen was awesome!  

One of the show's guests was Marja Vongerichten.  We all went home with her new cookbook, The Kimchi Chronicles.  And that's not all!  We also went home with some cool gardening tools (I miss having a garden) and a cool crafting tool.

Last weekend I helped out & took at a class at FCI about New Directions in School Meal Planning.  As greater emphasis falls on health and childhood obesity, school lunches have come under scrutiny.  And, for good reason.  This course focused on creating healthy, nutritious and sustainable lunch plans that work to satisfy students, parents, teachers and administrators.  I was really excited to learn more about this topic, and this class turned out to be more interesting, eye-opening and informative than I ever could have hoped.  There are a number of schools in New York that have brought chefs in the run lunch programs, eliminating frozen pre-packaged meals full of preservatives and ingredients that no one can pronounce.  It's a great movement and I really hope this catches on in many more schools and districts across the country.  Who knows what will happen after school, but I'd love to be involved with this.



I'm trying to catch up on blogging as quickly as possible.  When I think about fall cooking and baking, three things come to mind - apple, pumpkin and squash.  You'll be seeing a lot of recipes involving these awesome fall ingredients, soon!

Let's get the ball rolling with some apples!  I just picked up some crisp, delicious cameo apples and crispin apples at the farmers market this morning.  I made it about 2 blocks before I dove into the bag.

This is a quick, simple, delicious nibble you can put together in 10 minutes.  Trader Joe's Multigrain Pita Bite Crackers are awesome.  They've become one of my favorite snacks.  As an alternative to using crackers for this recipe, you can also toast some mini pitas, or cut up a full-size pita and toast it.



Apple-Ricotta Pita Bites

Multigrain Pita Bite Crackers/Mini pitas, toasted
Ricotta cheese
Honey
Apple, thinly sliced

If you're using mini pita bread, toast the pieces and let them fully cool.

Top pita bites with a spoonful of ricotta cheese, a small dollop of honey and a thinly sliced piece of apple.
