Happy Friday!! I love Fridays, and I love summertime Fridays even more. I'm not lucky enough to have to summer hours at work, but even so, Fridays in the summertime don't quite seem like a "real" work day to me. Probably because we're so close to the start of a beautiful, warm, sunny weekend and my mind is already drifting to the fun activities that await me....like enjoying some post-work drinks at this lovely outdoor spot, taking advantage of NYC's Restaurant Week, a race in Central Park and of course, cooking up some delicious food.
I don't have any recipes to share with you today, but I do have some exciting news! Really, really exciting news. A couple times since the beginning of the year I mentioned that I was making some big changes, and starting something really exciting...but for a handful of silly reasons I couldn't spill the beans.
Last summer I decided it was time to make a couple changes in life. I hit a point where I felt like I was going through the motions of daily life without inspiration or drive. I didn't feel like I had any direction. Sure, I spent plenty of time doing things I love...like triathlon, traveling to New Zealand & Ecuador, cooking all sort of delicious creations in my tiny kitchen and blogging. But I was also spending a lot of time in my work life, feeling bored, uninspired and unmotivated. Life is far too short to spend my days feeling like this and just going through the motions. We spend so much of our lives working, and there's no reason you shouldn't do something you love. (I've been told by some this isn't a realistic goal. While I beg to differ, I do understand that for some people maybe this isn't realistic. But, I'm fortunate to be at a point in my life where I can make this a reality for myself). So, I started to put my plan of action for change into order. I thought about the things in life I'm truly, truly passionate about, the things that drive and inspire me. I came back to the same thing time and time again, and truth be told, it didn't really take much thinking....cooking.
What most people don't know about me is that I've thought about going to culinary school since I was in high school. And back in the beginning of May I started my first day of class at the French Culinary Institute (FCI) in New York City. This is probably the biggest risk I've ever taken. And, definitely the best investment I've ever made. To say the past two and a half months at FCI have been amazing is an understatement! I'm not quite sure what awaits me when finish school, it remains a mystery, which is both slightly scary and very exciting.
My program is split into 6 levels (I'm currently in the middle of Level 2) and spans 9 months. One thing I know for sure is that it's going to fly by. I have a lot more to tell you about FCI and some stories from the kitchen...they'll be on their way soon.
In addition to my regular posts on what I'm whipping up in the kitchen at home, I'm so excited to share my culinary school experience with you!
